Unbromated. What Does it Mean?

Unbromated flour is wheat flour free from added chemical agents, specifically potassium bromate.

Potassium bromate is added to some flour as a dough strengthener. It causes flour to rise higher and produces a lighter texture.

But potassium bromate is identified as a potential carcinogen and is banned in the European Union, Canada and California as well as other lands.

We dedicate the effort to using our skills as bakers to produce the finest quality breads. Our bakers produce beautiful texture and doughs that rise from their efforts. This is one example of the value of hand made.

We don’t short cut the craft of baking—we love it.
